KARAZ / Cherry & stone fruit
Cherry & stone fruit · interventionistSix things you can still change. One that decides what they are worth.
Cherry is an interventionist crop. In the last six weeks before harvest, six quality parameters are genuinely steerable through water, nutrition, protection and canopy. The seventh variable — the date the fruit reaches the market — is the multiplier on all six. A perfect cherry landing in the middle of the regional glut is a commodity.
Steer the fruit. Protect the window. Route the arrival.
Calibre, sugar, colour, firmness, cracking resistance and shelf life — moved against measured stress in the block rather than against a fertigation calendar written for a different decade.
Threats flagged with the block, the stage the crop is at, and the hour after which the available intervention stops helping. A frost warning without a deadline is just weather.
Predicted arrival per block matched to where the premium actually is — early enough that forward contracts, labour and cold chain can still be moved.
Decisions, not dashboards.
Each one names the block, the action, the reason, and the date after which acting no longer helps. If there is nothing worth acting on, the system says nothing.
Decision cards illustrate the format and the severity model. Blocks and zones are coded.
What is steerable, and what moves it.
Nothing here is exotic agronomy. What is difficult is knowing which lever to pull, on which block, in which week — against measured stress rather than against the way last year went.
| Parameter | Why it pays | Principal levers |
|---|---|---|
| Calibre | Grade thresholds are step functions — a millimetre changes the price bracket. | Water availability through cell expansion, crop load, nutrition. |
| Sugar (Brix) | The grade that pays a premium is defined on Brix, not on appearance. | Controlled deficit timing, canopy and light, harvest date. |
| Colour | First thing a buyer grades on — and the parameter most likely to run ahead of sugar. | Light interception, temperature exposure, pick timing. |
| Firmness | Decides whether the fruit survives the route to the buyer at all. | Calcium nutrition, water regime in the final weeks, pick timing. |
| Cracking resistance | A single rain event at the wrong stage can take a block out entirely. | Water regime stability, calcium, covering decisions with a deadline. |
| Shelf life | Determines which markets are reachable — and therefore which prices are reachable. | Pre-harvest stress management, firmness at pick, harvest date. |
| Arrival date | The multiplier on all six above. Same fruit, different week, different business. | Phenological steering, altitude and variety spread, ripening management. |
Three hundred metres is worth a fortnight.
An estate spread across altitudes is not merely diversified against frost — it holds a set of arrival windows it can play against the market, if it knows early enough which block will land when. Most estates discover their arrival order at harvest. That is two months too late to do anything commercial with it.
Two climates, deliberately
A three-altitude Mediterranean mountain estate — roughly 1,250 m, 1,350 m and 1,550 m — which gives the same varieties three different seasons inside one operating year. And a commercial cherry farm in northern Germany, which tests whether the logic survives a maritime climate, different varieties, different cover systems and a completely different set of buyer expectations.
Season 2026 is an evidence-building season, and we describe it as one rather than claiming a control range we have not yet earned.
The vine runs on the same engine and a different logic.
Cherry is interventionist — you steer measurable parameters toward a grade. Wine is interpretive — you read which style the season is producing and match it to the buyer who pays for that style. Shared sensing and pipeline, separate strategy.
Deliberately not yet
Olive follows the same pattern — its own quality model and market logic on the shared engine. We are not adding it before the two live branches carry their own weight. A platform that claims five crops and understands none of them is the failure mode we are most determined to avoid.
